I just equip a camel/horse that matches with the outfit I'm wearing. Bestthing for horseback combat in AC Origins is using ranged attacks. So shooting arrows while keeping the enemies a fair distance away from you or throwing sleep darts to knock them off their horse are both good ways of incapacitating enemies.
